I grew up in South Texas fishing out of Port Isabel. Snook started returning to the Lower Laguna Madre back in the early 80s. Last time a was down there, in 2009, caught a couple under the lights on the back side of the Island at the condo we were staying at. I believe this is the area you will have the best chance of catching a Texas snook. I would fish South Bay and the Laguna Vista shoreline all the way to Holly Beach during the day and the lights and structure on the back side of the island at night. All the snook I've caught down there have been on soft plastic jigs while fishing for trout and reds.

btw, I've never eaten a snook I've caught in Texas. They're still too rare a catch to keep. I always catch and release snook. Now when I go to Florida this winter? I'm looking to catch some for the table. Yum, yum.
