Bluegills are some fine eating fish. Very light and flaky.

Fillet 'em or not, just beware of tiny bones if you cook 'em whole. Either way they're delicious!

Do people eat blue gill? You bet we do! thumb They are one of the best eating fish in Texas. Fry em, Grill em, or bake em serve them with some fresh cut potatos,a garden salad, and hush puppies. You got it made. grill It don't get any better than that. food

Two things:
1. I saw a post last month about worrying about eating the fish from fossil ridge. I called the TPWD and they do not have one incident of a toxin filled bluegill so that is great if you are worried.
2. Great recipes above, but google tilapia if you want some other ideas on how to cook them up!
