What is Your "Holy Grail" Species in Freshwater?

What species have you been targeting in freshwater but just cant seem to hook up with. I guess mine would be a nice size striper. I have caught them up to about 20" but never caught a trophy by any means. I want to SEE a paddle fish in the wild but not necessarily catch one. I hear they are pretty fragile and rare. If you can help someone with advice to land their sought after fish by all means feel free.

How about keeper-sized fish in general from the boat?! Since getting my first boat back in May, I haven been unable to catch decent fish. I think we've caught maybe 5 keepers total. We;ve caught plenty of undersized fish, but we're lacking in the keeper department. Heck, I can catch more keepers from the bank than I can from my boat!

30+ river striper in Tx. Holy Grail material? maybe not, but it's pretty high up there along with a 40" musky & 30" male artic char. maybe a 5# brookie & a 8# river smallmouth, a 20# smith river steelhead, that 50# blue cat (caught once, not landed...), and thats just north america..... Peacock, payara, tigerfish, golden dorado, goonch catfish, atlantic salmon, snakehead, mongolian taimen, bull trout, on & on, man..............
honestly, I'd like to catch a lmb in saltwater. there's places it can be done.

honestly, I'd like to catch a lmb in saltwater. there's places it can be done. Switch places with me lite-liner? I have a 52lb Blue (R&R), a DD Rainbow, and a DD Brown. I've also caught my fair share of decent steelheads and brookies. The joys of growing up in Idaho (except for the Blue; he was from Lavon).

Another 3 lb. crappie chaser here. Have caught many over 2.5 but haven't broke that 3 lb. barrier.... yet

Huge brown trout on a fly rod. I've had a lot of big rainbows but every brown I've had has been really small.
