Next time you're hongry and driving thru Terrell on 80, stop in and give Fat Catz Louisianna Kitchen a try. It's right on 80, two blocks east of the old 80/34 intersection and what is now the new 34/80 intersection. In the last year their menu has fourpled. Dang good, too! I like the crawfish trio......

If your ever at Fork theres a little shack called Hilltop outside of Quitman on 31 that puts on a pretty good Crawfish Boil. Been awhile since I've been but the Boudan was pretty good too. Also let you BYOB if you want.

When you guys do your own how long do you leave them in the boil? It seems that if you bring them back to a boil then turn down the heat and let them sit for a bit they'd absorb more liquid. I've seen recipes that recommended 3-5 minutes up to 20+.

10 min or so. But you should add ice so they don't continue to cook.

I cook mines for around 5 mins or when they start floating. Turn the gas off and throw ice on top and let it sit for at least 15 mins. Longer the more juicy

Well pappaduex's was just ok, the bugs, were sorta small and seem'd a little high to me, 7.95 for 1 1/4 lbs. The seasoning was good. What is the best price you found for bugs?
