I "shave" the steel downwards. (Be careful.)If it's a stainless steel wink you also want to polish it with some fine grade sand paper every now and then.

I remove the heads,insides,,remove all scales..
Soak in beer for 8 hours in cold frig..
When ready to cook
...wife makes me cook all my fish outside ..she says it smells up the house like fish
..whatever...
Then I place them in an egg wash ,,then in a large zipp bag or large paper sack... fill with your best fish mix dry goods you like...place in fish.. (I like white flour-fine corn meal-fine mustard powder-salt,black- red ,and white pepper),place powders in coffee grinder and grind to fine powder...pour in bag/sack shake bag to coat fish well..fry in very hot oil till they float to surface..let cool and eat.
Big gills are the best..The meat just pulls off with no bones..
Fish ..chips,,beer..beans..more beer..oh..and lemon vanilla pound cake.. food

Nice! "The meat just pulls off with no bones.." But doesn't that also pull some of the batter off the fish too?

Yea...the batter comes off with the fish fillet chunk white meat..
it is GOOD with fish --crunches up smooth when you eat it...wash down with cold beer or your favorite beverage ... food
