What gloves keep your hands warm, and are also thin enough to still fish in?

They have some at Academy they sell pretty cheap that work very well. They are with the fillet knives, pliers, culling system area.

I use the Windstopper Foldover Mitt from Simms. www.simmsfishing.com

After fighting frozen fingers for years, I finally figured this glove thing out...it all depends on how cold the conditions are going to be out there. Not exactly shocking news but it makes all the difference.
50 degree air temps I can get by with the fleece golf gloves, but the second they get wet they are worthless. Any water-repellent glove will work.
50 degree and lower with any wind at all I want mittens. The windstopper foldovers mentioned above look great so long as they have the pocket to insert a chemical hand warmer. The foldover option lets you have all the feel you need while staying warm. That's pretty much what the crazy ice-fishermen prefer up north. I found a pair of camo foldover mittens at academy with the hand warmer pocket and they even had magnets so you could lock down the fold over mitten and thumb to keep out of your way. These were only around $15 and with the chemical heat pack in the pocket my hands have never stayed so warm, even after getting them wet.
It's the only way I'm going to go from now on, nothing worse than freezing hands except maybe freezing ears!

I bought the one's similar to these: http://www.footjoy.com/catalog/productview.asp?c=46 Glad they work for some, but I'm sticking with mittens and hand warmers.

Fingerless gloves with latex gloves underneath. Hand warmers inside on the back of your wrist.
Saw this in a video, I think it was Skeet Reese that shared it. Your hands stay warm and dry even if they get wet. It's awesome. With just the latex over your fingers, you can still tie knots and there's hardly anything in the way.

I go with latex surgical gloves then slide a hand warmer under them on the back on my hands. You have to change out the gloves several times but works great.
