Not hardly any difference in the 225 to 250 ProXS. I ran both on the same designed hull and the smartcraft on both showed right at 4 - 4.5 gallons per hour (pretty sure that was the measurement) on both of them.

Get the 250 if the boat is rated for it...you will get the $ back in resale FOR SURE! No one wants a boat rated for a 250+ that has a 225 on it when for a touch more money they can have the 250.
