First of all eliminate north Texas they still call breakfast Tacos Breakfast Burritos. I like Reparo Taquito in Corpus. There are a few other good places down there as well, but "the best" really depends how thick you like your tortillas.

Las Salsitas in Houston. Come to HOUSTON and you can find a better taco from a truck than you'll find most other places.
IF you are loking for a real taco and not a gourmet taco at a high end place

Dairy Queen T-Brand Tacos 103 Sunset Blvd. Sherman,Tx. 75092 Actually DQ T-Brand Tacos are pretty good. They are like you would make at home with a taco kit

Wichita Falls finally got a Fuzzy's Taco.. I liked the Baja Tempura Fish, crispy.. and the wife liked her burrito.. They are the best tacos we have here..

Taqueria Morelos in Austin. Hwy 183 south of Hwy 71 on west side of the road. Crispy taco plate is incredible. Family owned hole in the wall restaurant.

Taco Shop on 7th in Corsicana has a pretty good taco. Also, you gotta love the chili burger and XXX Root Beer.
Dairy Queen in Trinidad or Seven Points have good tacos. One of them, I think it's the Trinidad location has a house sauce that makes the tacos so much better.
But if ya'll are coming through Corsicana on one of my creative smoker days when I start smoking everything. I make a smoked taco that everyone around here likes...Or it could just be the beer talking.

Someone told me there is a Fuzzy's in Lewisville. I'm assuming (hoping) it is the same as the one everyone is refering to by TCU. Will be checking it out.....

Tejas Cafe in San Antonio makes a pretty mean chorizo and egg and it is about the size of your head!

Tio Dan's Puffy Tacos....Round Rock Texas. Best Tacos (picadillo) and Breakfast tacos. While you're there pop around the corner to ROund Rock Bakery(aka Lone Star Bakery- as featured on Man vs Food) and have a blueberry cake donut and a few of your normal favs. Texas Jalepeno Sausage Kolache is awesome.

The late, truly Great, Joe's Place on East First Street, Austin, TX.
What you used to get there were flying saucer sized hand made flour tortillas, inside the tortilla was some of the best pinto beans on the planet; on top of that, some of the finest cooked,perfectly spiced lean picadillo beef; on top of that were hand cut steak fries, cooked to perfection, and then cheese, lettuce, tomato, and grilled onion if you wanted it, and their home made salsa. They came two to an order, and few people finished both in one sitting. Massive soft flour tortilla tacos, magnificently done. Wash it down with your favorite ice cold, long neck bottled adult beverage, and wellsir, a slice of heaven on the East Side!
Unfortunately the taco stand was attached to a pool hall in the front that kept the austin police busy enough to where those in the know had it figured that Joe's Place's days were numbered. It eventually closed.
