I tried them(just to see for myself), the meat was really red, and it tasted bad. I think this was because i did not bleed them and they were in a cooler for a day in a half. I think next time I catch some i'll keep them again, just to make sure.

Hardhead are a nuisance, but in the past when I've been getting skunked on everything else and hardheads are biting, I pull out a very ultra light rod and have some fun with the kiddos. I think hardheads are a rite of passage for many Texas kids who fish the gulf coast.
I've never given a thought to eating one, but I have used them as cut bait in dire extremes.

Years back, hardheads made pretty good fertilizer, when my neighbor used them dehydrated, and grated in the vegetable garden with other organics and fared pretty well with the harvest.

I just don't understand why someone would choose to eat hardhead over some of the meatier and better tasting fish that occupy our coastal waters. Well, it's sortuhh like those folk that risk their lives to climb mountains..................Because it's THERE!!
