Never tried it, but my little brother tells me his favorite way to eat buffalo is scale and clean one thoroughly. Cut 3~4" cross sections with bones and all. Boil up your crawfish and while they are going through the 20 min soak period after boiling insert your cut pieces of buffalo and let 'em soak for the 20mins. Swears it'll come out like sweet seasoned crab meat, but you won't have to work that hard to get to it.

Zach is right. (what is considered a lot?) We don't buy canned salmon around here any more (I know, it is a horrible thing to do to a salmon, but I love the patties they make). Buffalo (and carp) I pressure can, and stick it in the pantry. Then come winter, I open a jar, mix the fish (it is flaky, and the bones are almost impossible to find, the ones you can find are crunchy and crumble) with egg, chopped onion, chopped bell pepper, and bread crumbs. Make into patties and pan fry. fantastic!

Fillet them and skin them and remove the ribs. Then, partially freeze the fillets. Next, run the fillets through a meat grinder along with some onion wedges. Then, mix the meat and onion together with eggs, salt n pepper, and seasoned bread crumbs. Make into small patties and pan fry.... Yum Yum, and no bones to worry about.
