using an electric fillet knife is one of the easiest things you'll ever do. You'll feel like an expert. Just keep your fingers out of the way of the blades.

soap and water work best for me, lol sorry, actually I just fillet them like I do sandbass, takes a little practice but you can do it.

Normally, I flop the catfish up on the table then try to get a hold of it usually letting it slide back off the table. Then a butcher the first one bad enougth that my fishing partner takes my knife away and cleans rest while I drink beer. That's just my method though. I'm sure some of these other work equally as well.
