I don't care how you cook it, and I've tried them all, Kings taste like sh%*. Weird that their smaller cousins, the Smacks, are delicious.

I just fillet them like a regular fish but I go tail to head and then skin out. I then flip the fillet and slice at an angle lengthwise to knock out that red line of meat. Soak in some super cold milk for an hour before deep frying and it'll come out good. Kings are perfect fish for large groups.

I got to say, I love Kings fried. We usually go down during Labor Day weekend, catch our limit of Kings. We bring them to our dove hunt and have a huge fish fry. We normally have about 20-25 people and the kings are gone before anything else.
My Pop always said, big bait.... Big Fish!!!!

Anyone who will eat a King will drink a Lonestar. Both are nasty. You must have been to a fish fry at my house  . I'll be frying some fresh kings tomorrow and the fridge is packed with Lone Star Light.  Mike
