Coat them in crushed spicy pork skins and pan fry in butter. Very Good!

That sounds great - but might want to use the Crushed Pork Rinds fried in bacon grease - yep it's better laugh.

OK, back to the "healthy" stuff...I submitted this to Crappie World mag. and they printed it in the March issue (didn't win no "Green Egg" though). It's pretty tasty...
Ingredients:
10-12 Filets
1/2 cup Light Virgin Olive Oil
1 Tbsp. Louisiana Blackened Seasoning
(any brand will work)

In a cup or small bowl combine oil and seasoning and set aside for 1-2 hours stir about every 20-30 minutes
In a shallow pan large enough for all filets to make single layer, add oil/seasoning mix
Add filets to mix and turn once to coat both sides
Let stand for 1 hr at room temp. turn twice at 20 min intervals
Preheat grill (charcoal preferred but gas will do) to 300 deg.
In a large "grillin' cage" place filets to form a single layer (for stronger flavor, sprinkle extra seasoning on both sides to taste)
Grill for 3-5 min and turn.
Grill for 3-5 min or until fish flakes
Serve with garlic bread and rice (I prefer Zatarain's Dirty Rice Mix)

I'm cookin mashed potatoes (from the garden – red potatoes rather than Fired - to go with the fried fish today),

But really what a - super stupid post - let's get back to how to catch fish,

I know that some of you fellas will roll your eyes at this one...so did I until I tried it. Dip the fillets in your favorite teryaki sauce, roll in some finely chopped green onions, and pan flash fry them in peanut oil. RIDICULOUSLY GOOD!!! Also, I'm shocked nobody mentioned the old school louisiana fish fry seasoning. Both are simple and tasty!
