Looks good, when is the next cook out? Show up at the Belton Bunch Fish Fry on May 31. I'll be there with my pan. Looks like George has it down too.

Try this one.
Blackened Hybrid:
Warning:It's best to do this outside. It will stink up your house. I use my propane fryer burner.
Heat a large iron skillet on high till it starts smoking. Cut trimmed hybrid fillets into three pieces. Brush the meat side of the fillets with real butter. Spray the skillet liberally with PAM or other nonstick. Place the fillets in the skillet skin side down. Thicker pieces in the middle and tail pieces around the perimeter. Dust with Tony Cachere's cajun seasoning. I like to use a little salt also, but that's just me. Cook till the edges start to turn white then flip. Lightly brush with butter. Continue cooking until the thicker pieces are flaky. No need to season the skin side.
This usually happens every time I bring a few fish home. They never see the freezer.

I always check the freezer before I leave the house so I know if it is going to be a catch and release trip or a meat trip... I agree completely no need to keep them in the freezer for to long. I make sure to keep a regular rotation to keep as fresh as possible usually keep just a few more before the winter season. right now the freezer is empty except the venison meet so i ready to tear them up in the next couple of weeks or so. i to also cut out the red meat on stripers and hybrids dont remember having them with the red meat still in them. my father always told me to do that because of the flavor.

And what does that have to do with C&R--almost nothing. As much as me liking fried chicken gizzards and hearts better. Or better yet sauteed beef hearts are really good. But I eat hybrids also.

I think Hybrids are actually a little better than Sand Bass.
You just need to cut out the red meat (the line that goes down the middle and the very thin layer of red meat on the skin side of the fish). I also sometimes do this with Sand Bass too.
Both Sand Bass and Hybrids are better fresh (more true for them than other fish). So don't keep more than you can eat for your next fish fry or possibly two.
Those lakes are a great way to keep the fish fresh. Catch and release is a great thing.
Let the lakes be your freezer.
