Do they have a softer texture like a crappie or is the flavor and texture firm and flaky like a largemouth?

OMO, Firmer than crappie, not as firm as LMB.
I normally cut/skim off the red meat and then they pretty much taste like what ever it is that you bread them in.

Cut out the red meat and the larger fillets bake up really tasty -- litte butter, ceyenne, italian dressing, etc...

Like tommyc said, it is a firmer meat than crappie (larger flakes).

Another option is to fillet the bigguns and leave the skin & scales on. Grill the fillets on a medium high heat skin side down. When the meat starts to seperate, cover with BBQ sauce and cook another 5 minutes or so to thicken the sauce. The white meat pulls right off the skin and red meat.

I like the red stips of meat...that is the real fishy part.

My wife makes me cut that part out and get rid of it tho... flehan

GOOD! bake em with butter, cheyenne pepper, garlic salt, and creole seasoning and some shrimp

we use this recipe

spray a baking dish with non stick stuff
the juice of one lemon lime and orange in the bottom
ring one bell pepper and one onion
then sprinkle the fillets with old bay- or whatever dry seasoning you want oven at 350 for about 30 mintes and dig in
when we don't fry em

I soaked them in pink lemon aid one time and then fry-ed they tasted like candy. ONE time only

Bosman -- the answer to your question is no. I rate sandbass/hybrid/striper well behind crappie , largemouth and channel cat.
If you are fish-hungry , they are not bad, but there are
a lot of much better eating fish in the lake. ( just harder
to catch)

barBQ sauce I'll pass. There are some things that just don't need bbq sauce. Fish is one of them. Just my opinion.

They taste great but like Mo stated, there are better tasting fish in the lakes. I would not rate Large Mouth Bass ahead of them but I agree with the others. (I just don't like the taste of LMB although they are very good when grilled.)

Here's my top ten (freshwater):

1. Crappie
2. Walleye
3. Trout
4. Bluegill
5. Flathead or Blue cats
6. Channel Cats
7. Hybrids
8. Stripers
9. Sandies
10. LMB

And the bigger the sandie the more likely I am to cut out the red meat. If I am going to eat them myself I leave it on the smaller ones (under 12 inches or so) but if I am planning a fish fry I cut it all out. There's just too many people that don't like it.

(Pickled Pike would fall in that top ten somewhere and move out the LMB but since I don't know how to do it, either clean or prepare, I left it out.)
