Your crappie fillets before frying?

Also do you use an egg on the fry mix?

I’m learning a lot of disturbing habits from some friends and it’s making me angry.

Crappie fillet straight in seasoned cornmeal is the way Jesus did it so it’s the only way.

Yes soak them with little bleach the fish breath the chemtrails also...

I put some Louisiana Hot sauce on the filets, let them sit 3-5 minutes, then put in Louisiana corn meal and on to grease. The Louisiana adds some great flavor but does not make the fish hot. When eating the fish you would never guess the filets had hot sauce in them.

Rinse,Louisiana Blue Bag fry mix and in the grease.
Easiest and best fried fish IMO.

Dry fillets get a coat of mustard, then, cornmeal bath and released to the grease. I actually use zatarains crispy southern most of the time. The mustard binder is a game changer though!

The kids are soaking their chicken in NyQuil, I’m sure it will work on perch too

That's what I use the buttermilk for. If it was good enough for my grandpa Cotton its good enough for me.

I pat them as dry as possible then I might dip in egg to get a good coating before frying. Crappie, walleye, catfish, and any other sunfish require no soaking. I’ve heard of people soaking sandbass, striper, and hybrids in milk and hot sauce, but no amount soaking can get those things to taste good?
