Drum for sure. I hear they are wormy. I have eaten a few small ones and taste okay- just a different taste that I'm not fond of. I just throw them back. Fight good for the first 30 seconds and then give up.

I think you're being cruel to your pigs. I don't get the appreciation for the taste of drum. Their flavor and texture is funky. Next time I catch a bunch, I'll throw 'em on ice, though, and give them to some of you folks. To each his own! thumb

The rocks in their heads are called "otiliths" and make for good jewelry. A friend of mine had a necklace made for his daughter out of them and I ended up having my wedding ring made with a drum's otilith instead of any diamonds. My wife insisted on diamonds for hers though...

No suprise.

For the record, these are present in all bony fish, not just the freshwater drum and its cousins (like redfish).

We humans also have them, "otolith", BTW.

The freshwater drun does indeed have large otolith (hey baby, you got some nice otoliths).

They, however, do not help the male drum to make noise, that is done with their swim bladder (no matter what our grandfathers told us).
