I’ve had cheesesteak with provolone and I’ve had them with whiz. Honestly, provolone leaves me wondering where’s the cheese. Provolone, to me, has too mild of a taste. I liked the whiz better. Provolone has its place, just not on a philly. Whiz is good...provolone too. In Philly, whiz is for the tourists. Locals choose provolone. In many places cheez whiz is not even an option. The Travel Channel (and others) would have you believe different but they tend to stick to showing Pats and Genos. There are better places. PS - Cooper Sharp cheese is indigenous to the area and makes for a solid cheesesteak too. It's very popular.

Whitehouse Italian in Atlantic City, NJ is my favorite sub. They have a killer cheesesteak too.

I forgot about this one , Sandy's cafe on White street in Key West, Before boarding the boat , stop and grab a large Coffee and breakfast sandwich. Bacon , egg , ham on Cuban bread. Get a large , eat half for breakfast . The coffee will get you thru the charter. After pulling on big fish in the harbor for a few hours , the second half of the sandwich and finish off the cold coffee. good times. MO
