We just had our family Christmas dinner. Tamales with my wife’s spanish rice, salsa, and pinto beans. Banana pudding for desert. And then we had two more tamales for second dessert. Come on now.

The masa to filling ratio must be correct.
Thin envelope of masa containing a plentiful amount filling is key.
The best tamales I ever had were roasted chiles and cheese.
Delicious.

This is the most important thing to me also. Most tamales, especiallly store bought have way too much masa IMO. The best ones come from the back of a car in a parking lot somewhere if you can’t get them made by family or friends.

Same here. There's a Mexican lady that goes to church with us and she made some roasted chili and cheese tamales. Hands down the best I've tasted.

Not sure about men but my SILs had Mexican husbands/BFs. The SILs said that Mexican men think thick well fed women are better off then skinny ones.

when I was in college I worked at the Abilene Country Club and the old Mexican man who shined shoes in the mens locker room his wife would take the head or all of any wild hogs we shot and make us homemade tamales. They were so good, but he had a stroke my sr year and I never saw him again. I hope he recovered.

There was a one legged guy in a wheelchair. That sold Tamales He hung around downtown Bronte Tx. His wife made them and he sold them.

We would buy some from him on the way to the deer lease. Pretty good Tamales. That was several yrs ago. food

Tamales are one of those food types that are either really good or really bad. There's a place in Galveston called Pennie's that does take out tamales. Some of the best tamales I've ever had..... thumb

One of my co workers in South Tx would take a deer hind quarter and make tamales for me out of it. They were the best ones I had. I had to let him go during a slow down and he moved out of state. Now I usually stop at Delia’s in San Antonio and grab a few dozen, they are pretty legit.
