Well; the employees chant “brisket” over and over when the first batch of brisket burritos come out of the microwave in the morning.

It’s weird and off putting….their restroom facilities are great though.

Now comes the defining moment.

IF you grew up thinking some cut of pork cooked until it renders and drowned in some manner of sauce is indeed proper barbecue then by all means enjoy it.

If on the other hand you’ve experienced a properly cooked brisket or dino rib that needs nothing added to it then you’ve had your clue ticket punched and you know anyone who makes some goofy list or map hasn’t

First let’s take a look at the birth of bbq, twasn’t Texas or mexico. The southeast owns bbq and it has nothing to do with smoke or some sticky sweet modified version of ketchup. Pork is the main ingredient, always has been, always will be. Second comes the wood, real hardwood not some scrub brush.

It is perfectly acceptable to have misguided beliefs, it is simply ignorant to argue against origin of a method.

Actually it started in the Caribbean long before the south had it.

I love beef that is grilled or smoked properly, don't care which part of the country it comes from, as far as pork goes, ribs are really the only thing I care about, pulled or chopped pork would be at the bottom of my BBQ wants, I like it ok on a bun with some slaw, that is about it.
