Butcher Boys in Nacogdoches has a dang good burger and onion rings. So does Clear Springs, Butcher Boys is damn good. I always liked that place when I lived there. Their whole process was pretty cool. Seems like chaos to a newb, but makes sense after a trip or two. Controlled chaos is probably a good description lol

If find yourself near Gresham , Tx , Look at Kamo Kajun grill burgers,
Just a little shack, you can eat at the picnic tables or to go,
Really awesome burgers.

Lita's in cowtown was awesome. All cooked in a cast iron skillet. She's passed on now and the place is history; but when she was alive it was hard to beat.

Gotten to where I don't use 80/20. I think fattier meats taste great but it has more shrinkage that George Costanza in a swimming pool. But, it was cold!  And it was deep too!!!!
