Butcher Boys in Nacogdoches has a dang good burger and onion rings. So does Clear Springs,

Last time I ground meat I mixed venison and 80/20 hamburger 50/50. Some good stuff.

That's pretty much my go to process only I mix 2lbs of beef with 1 lb of venison + a few more additives. Makes a good burger. Had focaccia bread sandwich bread this weekend. My only complaint was the tomatoes were pretty much bland.

Gotten to where I don't use 80/20. I think fattier meats taste great but it has more shrinkage that George Costanza in a swimming pool.
