I've lost thirty pounds but hit the plateau.
I've added more exercise and less food but still hung up.

Onward!

Why less food? Are you watching your macros? Counting calories was less effective for me than counting my macros. I've lost 128 pounds in the last 2.5 years...I eat a lot more now than I ever have volume wise, but keep my calories at 1200 to 2400 calories a day, but make sure to get 1/3 of my calories from protein, 1/3 from fats (nuts and avocados), and 1/3 from carbs (whole food carbs like sweet potatoes, squash, tomatoes, asparagus, etc.).

How do you feel at your current weight?
Each of us has a 'set point' based on genetics, age, & influenced by activity levels. Let your body be your guide and throw the scale in the nearest dumpster. It will lie to you everyday.
If your only interest is losing short term weight or getting past a plateau I can give you a short list you can pick up at Wal Mart, Target, or any drug store and lose 10#+ overnight. I will not promise you will feel like a million bucks but you can say you lost 10#.

Point being let your body be your guide and keep on keepin' on.

There are formulas to calculate your ideal caloric intake based on current weight, age, and activity levels that are very accurate. It is a range typically and makes it much easier to be compliant. Eat more and more often of protein, fruits, and vegetables and you will be fine.

Short legs = More steps. I can identify with that as well. My waist size has been larger than my inseam since I was in 8th grade and I was an athlete.

Don't eat any carbs and you won't have to count anything. Beef, butter, eggs and bacon! Go carnovire it's what our bodies were designed to burn. There's no such thing as an essential carbohydrate!

It takes a certain breed to COMPLETELY eliminate carbs. Low carbs is much more realistic than literally zero carbs for almost everyone. I get your point and you're not wrong; it's just most people aren't capable. I wasn't when I tried.

But I did drastically lower my intake of them down to probably 10% of what I would normally consume.

While working in prison. Officers got a meal during shift. Anything the inmates were fed. But officers could have it made a different way. My shift was breakfast.

I ate nothing but eggs for so long. I can't remember how long. And that's all I ate. I was lean but not skinny.

Then years later. You'd hear about the Atkins diet.

That's not exactly true. Look at carnivores in the wild... wolves, lions, tigers, just about any of them... the first thing they all eat with any kill is the stomach and intestines which is filled with partially digested grass or plant matter from the herbivores. Plant matter is an essential part of a carnivore's diet, they just get it indirectly.
