We’ve been grinding our own from chuck for about 8 months. We got tired of the pink slime no fat whatever it was the big chains were selling. Next we will try the ground brisket when it’s on sale locally.
Keep looking forward. That’s why windshields are larger than rear view mirrors.

Kroger brisket is $1.99/lb right now. Buy that & grind your own! This is approximately 80/20. 100% ground briskets. I grind all of mine and I haven`t bought hamburger meat from a supermarket since the early 80`s. I use chuck roast now and then, but brisket is my preference by far. I've been thinking about doing this. How do you trim the brisket or do you just grind the whole brisket up?

I`d rather be a little fattier than leaner. I cut into long strips, so it goes into my grinder better. This is the removed fat from 4 big briskets. If it looks to lean after grinding, you can just grind a little more fat into the meat and mix it up. I run the regular HB meat thru the coarse plate and then the fine plate.
