I have a white sink and electric cook top and I still use cast iron. I didn't know you weren't supposed to do that.

If I have to get new pots and pans, I would get the copper ones.

Cast iron does not matter if gas or electric. I will argue cast iron is better on electric. Cast iron white sink you just have to be carful, it will make black marks on that white sink, and pain in the [censored] to remove. That is why a black sink is great per my post above, I’ll never get a white sink again.

Yes, I learned how to cook on them relatively quickly. After that, all good.

What is the trick? To me the trick is to not fry with them, more of a low heat type cook...

I forgot. It's still aluminum as the GOAT. But I use lots of oil. Mostly spray olive oil.

Get a thicker SS pan. I've only had that problem on the thin pans

Thicker SS pans don't really have that problem. Seasoning SS helps too.

I don’t pan fry things on high heat. Mostly cook vegetables on them, but also use oils with a high smoke point, like avocado oil.

Also, Bartender’s Helper to clean periodically helps a lot.

I have an electric glasstop stove and use Tramontina SS frying pans. I'm very happy with them.

Why not? I ran a 200' gas line just so we could have a commercial gas stove and oven. First wife hated to coon with electric, so the stove was gas. Only thing in the house that was gas. Also had a Geothermal HVAC system.

Porcelain white sink. Is that a reason to not use cast iron? I'm surprised JP hasn't been accosted yet for suggesting he would wash a cast iron skillet. My god, I hope he isn't planning on using soap. That's a sin, to some people.
