Looks great, now go find me a top 50 Texas BBQ place that uses a pellet smoker for their brisket and I’ll admit I’m wrong.

any comments about a lonestar or yoder?
The Yoder is built like a tank, it is of high quality, only downside is it is not cheap, quality and cheap normally do not go together.

My Traeger has been working hard for the last 15 years and still works just fine. Looks bad, works great.

Pellet smokers can generate good to great food, but can not replicate or achieve the smell, flavor, and experience of eating an expertly smoked brisket with a wood fired cooker. If it was intended for man to smoke meat on a pellet grill, we would have found mountains of compacted sawdust pellets instead of trees.

This is what man who cook in hole in ground said when pipeline welder built first offset smoker.

The Ole Hickory pits were designed with a firebox for logs of wood (not pellets)

I have a RecTeq 590, a Weber Genesis and an offset smoker. I`ve been using an offset smoker for the past 40 years. Sold my 36" Blackstone because I just didn`t use it enough. All 3 cook great food and serve a purpose. No pellet smoker will out perform my Weber for searing at high temps and the Weber gets to 550-600 quickly. No pellet smoker will have the great smoke flavor that my stick burner puts on a pork butt or brisket. It just will not do it. Anyone that says theirs does is full of $hit or they prefer food with very little smoke flavor. A pellet smoker easy to use with little prep, convenient and little clean up. Someone with little experience at smoking meats can do a decent job with a little practice and they will probably be satisfied with their results. I think that pellet smoker a great cooking tool that has given a lot of folks the opportunity to smoke meats that they probably would not have done if they HAD to use a stick burner.
