What all do you cook on your blackstone/griddle?

I know this sounds stupid, but ive wanted a flat top grill/griddle since i went to waffle house at a younger age! all that click clacking got me interested! LOL
Got the pellet smoker, got the propane grill....i feel like i NEED a griddle ASAP now. Definitely planning smash burgers and eggs, hashbrowns and breakfast stuff....but what else do you all make on your griddles? they werent really cheap this weekend so I couldnt talk myself into it there....so let me know what you all cook on it, and how often you use yours. Hopefully you all talk me into it with some delicious meal ideas! 🤞

Fajitas, fajita peppers and onions, sausage and peppers, and of course, burgers. some fajitas do sound good! What about meat...do you ever toss a steak on there? Im not a big steak guy and when I do eat one i usually go hot with cast iron. Wondering how some thinner or not super thick steaks fare on the griddles?

LOL Im not great at grilling and a few years ago got turned on to cast iron and searing and been liking it when I do do it. What OT do...grillers? I can never figure out my propane grill too many flare ups for my liking a lot of times

I ended up putting a Weber Griddle on half of my gas grill. Burgers & Bacon cook well.

Chicken fried rice is really stellar on a blackstone. Of course I cook all the usual foods - burgers, breakfast, etc
Never done fajitas - I'll have to give that a go.

I would consider getting a Camp Chef Pro90x. It's portable and has 3 30,000 BTU burners that can be used independent of each other. It also has attachments that you can get such as a griddle and a grill box. I use mine all the time. Anything that needs fried from bacon to onions to fish, I do it outside. The Mrs. is real happy with that program because it does not mess up her glass stove top.

I love cooking breakfast on it at the lake house , and have one at home we cook on as well. The Little Griddle is around 60 bucks I think and made really well .

I thought about this and it's actually a really good idea. I just don't use my grill anymore once I got the blackstone. I'm either using the smoker or the griddle so keeping the grill just didn't make sense.

We cook fajitas on Christmas Day. I’ll start by cooking the whole fajitas on the charcoal grill to medium rare. Slice once they’re done.
On the Blackstone, I’ll cook a half pound of chopped bacon. I’ll add onions, mushroom, and peppers to the bacon/grease and get that cooking good. I’ll add the fajita meat to that and cook it until done.
While the Blackstone is cooking, I’ll crank up a propane fish fry burner and preheat my largest cast iron platter. Add the fajitas to that until I get the sizzle going. I’ll squeeze some fresh lime and add a couple handfuls of cheese. Ready to serve and eat!
Momma makes home made guacamole and pico.
That’s how we roll on Christmas Day.

I have a 36" propane griddle. Makes the best breakfast, burgers and fajitas! The best part is the bacon, carmelized veggies and no fatty food flare ups. You can load up so it cooks fast! You can cook two dozen eggs SO much faster than a frying pan. And don't let those grill top griddles fool you. They don't work anywhere near as good as the real deal.
Downside - It is HOT standing next to it.
