In the '80's, I was shopping for quality foul-weather gear. All the mfgrs had just come out with "breathable" material like Gore-Tex, etc. I talked to an ocean racer and he said get Line 7 from New Zealand. I told him they would make me sweat. His words of wisdom were: "Sweat's warm; Sea Water's cold!" I bought Line 7. They did 30,000 ocean miles since 1980, and they're still going. Smelly, but great.
If you don't want your feet to sweat, leave them on the settee in front of your TV set. Waterproof shoes are to keep water out, even if your feet sweat a little.

YMMV, IslandJim

On my scooter, your feet are going to get wet. Always. It's the nature of the way things are. April to October the bay water is plenty warm, so you wear flip flops or something made to be wet. I'll wear the shrimp boots a few times when it's cold but conditions are right. In February I'm usually wearing waders so it doesn't matter.

Don't wear waders without a life jacket, if you pitch yourself in the pond, you're crab food.
