I've done chicken, turkey and pork shoulder, have'nt tried brisket, any suggestions for timing or is this not the right tool for the job.

Never thought about a brisket on the BE. You need a recipe for "HOT and FAST" cause it cooks at 500 degrees.

I wouldn't cook a brisket on the big easy. It cooks way to hot.

Thanks for the responses, guess I'm trying to crunch time at camp between morning hunt, nap and evening hunt. There is no one to watch the pit, we had one last year that took 18 hrs total cook time because the fire went way too low during the cook. It finished ok but not great. It gets windy out there also causing problems.
We don't have a pellet grill, which would probably be ideal. We have a weber kettle and a large stick burner. I'll just have to get it started early and cut field time a little as before.
