I might write chow-chow, but I would’ve ever say it out loud...it just sounds half ghey.

My favorite is Usingers, out of Milwaukee, WI. Next runner up is Fishers in Muenster, TX.

Fishers has some amazing brats, wieners, and knockwurst.

Get yourself some pretzel buns, Dusseldorf mustard, beer of your choice, and enjoy!

No sir...I was raised the only thing on a brat is mustard. Chow-chow belongs on sandwiches, not brats.

I make my own boudin and sausage and that's what I use 90% of the time, My favorite commercial sausage (for the grill) is Slovacek's bbq seasoned links. For other uses Conecuh sausage out of Alabama is downright delicious.

What the hey is wrong with chow-chow? Cabbage, green maters, peppers, cukes, onions all chopped up, pickled sweet or sour, mild or hot. Delicious! Bunch of haters I tell ya!

Olfen Tx. Fall Festival sausage. We buy enough until the next year. Haven’t found a decent store bought yet. [Linked Image]

We have these a lot. We like the jalapeño cheddar ones. I prefer a true brat, though, and Johnsonville makes some good ones. My wife found some at Whole Foods that were all different flavors, but I can’t remember the name of who makes them. They are really good.

The best jalapeño and cheddar sausage I’ve found is at Buccees. It’s in their cooler by the jerky counter. It’s excellent.

Kiolbasa brand smoked and Pollok’s wedding sausage, which are available at HEB, or Granzin’s fresh garlic sausage are my go to for grilling or smoking.

Chow chow is some of the best stuff ever invented. Almost as good as boobs, sun dresses, or low rise pants

That's right elcoyote. So delicious. Buy all of mine at the farmers market in Fayetteville, buy a case at a time as well as my favorite salsa aptly named Ole'

I hate when they put cheese in sausage. Why do they do that? If you need to cut the heat from a jalapeno by adding cheese, then you don't need to be eating jalapenos.

Never have I thought the cheese in jalapeño cheese sausage was to cut the heat. I always thought it was because cheese makes everything better.

It is bacon that makes everything better. Not cheese. And is seems they only put the cheese in jalapeno sausage, so cutting the heat was just my guess.

Just imagine if they replaced that cheese in your jalapeno sausage with bacon. I'm getting a tingle up my leg just thinking about that.

I will usually make one 25# batch Jalapeno'/Cheese every year and give 99% of it away. The normal cheese to meat ratio is 10%. I use 5% and still don't care for it. Friends and family seem to really like it and I enjoy doing it, otherwise it'd never see the inside of my smokehouse. This batch had 5%hi-temp pepperjack. [Linked Image]

Bacon also makes everything better. There are plenty of options with cheese that don’t also contain jalapeños. A bacon and cheddar brat would be incredible and someone needs to get on that.

But cheese and bacon making everything better isn’t mutually exclusive. Both make everything better.

You are way way off on this one, Duck Hunter. Add cheese on any of the following, and you will ruin it: cinnamon rolls, cookies, green beans, blackeyed peas, SAUSAGE.

Bacon on anything in that list... food

thumb Yep, word around occupied Mexico is that elcoyote will put anything in there. I’m not judging, just providing an example from real-life that supports your statement.

Agreed. A lot of cheese might even make black eyed peas edible.

Has anyone heard of or know where to find Texas Beef Rings. They were made by Harlan Wright Jr. and sold by Taylor's Dressed Beef until they went out of business a few years ago. They were a fresh beef sausage that you had to smoke or grill and they were seasoned with a ton of pepper. Some people at a family reunion in Weatherford that I fed called them hotgut sausage. Now all I can find are the Elgin beef and they won't sell them directly by the case unless you are buying a pallet full.

Never heard of them but they sound awesome and would be made better by adding cheese.

Bacon also makes everything better. There are plenty of options with cheese that don’t also contain jalapeños. A bacon and cheddar brat would be incredible and someone needs to get on that.

But cheese and bacon making everything better isn’t mutually exclusive. Both make everything better.

I make smoked sausage with bacon, cheese, and jalapenos in it. grin It's good chit.

I am also in the no cheese camp.

I don't care for cheese or bacon in my sausage. Jalapeno is good. Same reason these are gross:

You are way way off on this one, Duck Hunter. Add cheese on any of the following, and you will ruin it: cinnamon rolls, cookies, green beans, blackeyed peas, SAUSAGE.

Bacon on anything in that list... food

I studied your list. Yeah, Duck Hunter is still right...all would be improved with cheese.

BAM

You two should go get a COVID test. I hear loss of taste is one of the first symptoms.

Mikulik Sausage

If you've never tried this then you're missing out. Probably the best sausage I've ever tried.
