I think the amount of cover that a lake has in it, has something to do with crappie growth rates. Those race horse looking crappie you are referring to probably spend a lot of time chasing shad in open water.
Lakes with a lot of trees and brush piles the crappie feed more easily by stalking/sneaking up on shad.
