Grilled with baked Brussels sprouts and cilantro cream sauce...
I'm impressed with y'alls' creativity. For actual grilling on grates, firmer species like white bass and even smallish freshwater drum will hold together much better for you. Wouldn't turn down any of your good stuff here, though.
