Caught three flounder and quite a few specs on a short trip to the coast right before the storm blew through last month. Enjoyed one of the flounder earlier this week.

Is that a pompano in there? Why yes, yes it is. Will be a surprise treat within one of the bags of frozen spec filets.

Top pic was after a shrimp cast net trip. In between shrimp runs i'd float a mud minnow over to a point on a big cork. Second is a 6 pound flattish. Caught fan casting a flat in the Calcasieu ship channel just up from the Cameron ferry. I was 60 pounds lighter. Those are some real door mats!

So what's the consensus of the group? Is it true everything down there has worms regardless of size? Unless you planning on making sushi, cooking the fish will kill any parasites

Flounder, blackened if my preferred inshore fish. As for fishing for them, I would just use some bass tackle. I usually carry 2 rods with me. One is 7' MH baitcasting rod with 10-12# line. I usually use Big Game since it's plentiful and pretty abrasion resistant. The other a 7' M spinning rod with a 2-3k size reel. 10-20# braid with a 10# leader. I keep it pretty simple on the lures as well. A topwater or two and several bags of swimbaits and jigheads. Down South Lures, Academy Link For colors, I like Texas Roach, True Plum, Kickin Chicken, Blue Moon. I like the Hogie or Norton jigheads that have the spring on the shank of the hook, to thread the plastic on, 3/8 oz. The Gulp baits have also caught a ton of fish for people. snook, is tops to my tastebuds, might have to go further south to catch them but they are probably moving further north along the Texas coast each year.

Flounder wins the bay fish prize, but fresh trout is close. If you know how to cook it. You get four nice fillets off a flounder that makes for some bonafide great grub. The gravy maker makes the Ponchatrain sauce with shrimp and lump crab over the fillet that is the best piece of fish you’ve ever had.

Most people over cook their fish. It’s easy to do. Now for the three people who are still reading this here is the best fry recipe ever. You’ll need Zatarains fish fry Tall boy can of the cheapest beer you can find. Crystal hot sauce Tony’s Minced garlic Large sweet onion finely chopped. Put mix half bottle of crystal garlic in large bowl mix it with skunk beer until it’s like thin pancake batter. I prefer to put fillets in a hour ahead and let soak for an hour but if you have a bunch you can take straight from batter to cooker. Drop fish into cooker pull when floats. Now the secret. As soon as you pull the fish cover with the chopped onion. The hot fish will cook the onion which makes it all work. Add Tony’s like salt. Even the most adamant fish haters will be asking for more.

Free line some live shrimp under a popping cork around those lights after dark. Cast to the edge of the light. Dead shrimp will catch hardheads. I've caught hundreds of trout just like this.
