Do y'all wrap your ribs when cooking them? Like in the 3-3-1 or 2-2-1 method or do you just smoke them the entire time unwrapped?

I like wrapping 2hr at 250 on top rack unwrap sauce them a couple of times on bottom rack fall off the bone. But that’s me.

About 2 hrs till the rub sets then wrap in foil with Parkay,brown sugar and honey or agave. Smoke another hour or till you see the bones on the backside start showing. Pretty standard comp style ribs,just foiled mine up.

Smoking at 265-275 3hrs 30 minutes bone side down unwrapped 30-45 min wrapped meat side down 20 min (or until done) unwrapped bone side down
Oh, and leave the membrane on. Thank me later.

Bones are showing and averaging about 205 between bones. Unwrapped then glazed for about 20 min and I'll be eating soon. Pork butts have been resting a couple of hours.

No wrap is typically better. Sometimes on something like a Weber Kettle I need to wrap them at a certain point because there's a lil too much direct heat getting to em and I don't want the bark going beyond it's current point. I usually do variations of Texas style ribs without a glaze, fwiw. I'd still unwrap them after a glaze and let em go the desired time in that scenario.
Wrapping will help them get to done temp a little faster if you need. In my experience, it can also make them more fall apart tender than I prefer. I like the meat to pull from the bone very easily, but not falling off or apart when you just pick a rib up.

No wrap. Done it both ways. Wrapping makes them too soggy. You can still get fall-off-the-bone ribs without wrapping.
