Your tire shop guy is an idiot

Agree. The max temps are designed “cold” rated. Set to max temp when the tire is ambient temp( outside temp). If it gets hot, then then the tire is either run for long lengths of time(normal), creating normal heat or it’s the incorrect tire for the weight it is supporting.

I carry a 6000 lb truck camper in the bed of my pickup. I fill my E rated tires to the full 80psi. My boat trailer tires say “50 psi” so that’s what I run them at. If you don’t carry heavy loads or travel at higher speeds you can get by with a little less but it’s complete foolishness by those who say they run their tires at lower psi because the tire pressure raises due to higher temperatures. You think the engineers and manufacturers don’t know the tire pressure is going to rise when the tire starts running down the highway at 70mph with a load on it? They put the max psi on the side of the tire with the instructions: “COLD”. They don’t instruct you to try to allow for rises in the psi due the fact that you are going to drive down the highway in 100 degree heat with a load. They simply say fill them when “COLD”(sitting at room temperature). They have already allowed for the rises in temps and PSI’s. If you want your tires to run as cool as possible and minimize the chance of failure: fill them full WHILE COOL. Heat is the worse enemy of tires and lower psi creates additional heat.
