I finally duplicated their turkey legs,the secret is the #1 pink curing salt in the brine. It gives the meat the almost ham like texture and taste. I smoked these 2 lb legs over cherry and apple for 2 hrs to an internal temp of 165 and they are identical to the Fairs turkey legs. [Linked Image]

Brine
1 cup water
4 teaspoons kosher salt
3 teaspoons dark brown sugar
1 teaspoon pink curing salt
Brine for 12 to 16 hous

Yep,that's why I learned to make them so I can get my fix and they were only 4 dollars per leg.
