 Texas State Fair Smoked Turkey Legs

I finally duplicated their turkey legs,the secret is the #1 pink curing salt in the brine. It gives the meat the almost ham like texture and taste. State Fair is cancelled this year Yep,that's why I learned to make them so I can get my fix and they were only 4 dollars per leg.
