I fillet the fish, then lay the fillets on a paper towel and blot them dry. Coat the fillets with mustard, then dip them in corn meal. Deep fry until a crispy golden brown. I serve them with french fries, fried onion rings and hush puppies.

i didn't know if you could fillet them



I personally do not fillet my sunfish. I do have friends who fillet em. I cut off the heads,gut them, and then scale em. The meat is easy to pick off from the bones. Love eating fresh Bluegill!

It has been years, but we scaled them and fried them on the bone. Mom showed us how to pull out the dorsal fin and lift the meat off the skeleton. So so moist that way. That is how I would prepare them today too. Just too good to waste meat filleting.
