What is the best fish to eat? If I could pick any fish, I would eat red snapper. What fish would it be for you?

Crappie is good but IMO can't compare to many salt water fish. I agree on the red snapper! I had fried Mahi Mahi once that was by far the best fried fish I've ever had. Flounder is good too. Sheephead gets overlooked. It can be grilled, blackened baked or fried and good regardless of how it's cooked.
You get out of it what you put into it!

I have tried to eat a lot of different fish, some with good success and other with far less tasting results. The younger me caught and cooked: Ladyfish, Hardheads, Bowfin and a few others. I thought about writing a cook book on how to not fix eatable fish and wish fish to avoid. But the top 5 of the list are: Salt water; Snook Yellow Tailed Snapper Goliath Grouper (not Legal in the US) Flounder Mangrove Snapper
Fresh water: Crappie Walleye Salmon Sunfish ( got to be fillet able size, only spoon fish for the wife) Snakehead

I question the world I live on reading some of these answers I see.
Freshly caught tuna. A sashimi snack on the boat as you are going in. Then a steak of same tuna covered with sesame seeds and extremely rare.

Well it looks like crappie and walleye have a clear lead in freshwater. Saltwater is more diverse with dark meat and white meat options. Keep the responses coming. I am taking notes for future fishing options lol.

My opinion a Flathead especially the belly is the best freshwater. Walleye and bream or crappie are good. Snapper is my favorite salt. Years ago I went on a boat out of San DIego where we targeted barracuda. We also caught a lot of sculpin bottom fishing when sea lions wouldn't let us land the barracuda. I was surprised how good both were. I always wanted to try ling cod (another poor mans lobster) but never caught one.

I have eaten mostly fried fish and would have to go with fried flounder as my favorite. I used to sell orange roughy in my seafood/ meat market and it was really good as well. The list of fish I have also fried and like are catfish, striper and hybrids, black bass, tilapia, and crappie. I have also grilled fresh caught rainbow trout(really rich tasting), salmon, stripers and blackened catfish a few times. I cleaned a drum once after a guy said how good they were, but after sitting in my freezer for over a year because I could not make myself cook it , I threw it away.
Basa , Pangasius , Swai: This is another fish that I have fried a few times and thought it was ok, but it has gotten some brad press overtime and I decide to not eat anymore.

Freshwater: really any of the gamefish are good minus red meat. Sunfish would be at the top.
Saltwater: see above but #1 is a tie between flounder and speckled trout.

What SALLYSUE said 100 percent! I remember back in the 80s me and my dad went surf fishing down at High Island and we caught a large ice chest full of 16 to 24 hardhead catfish. I had always been told that no one eats them, but we took them home and fillet and fried them up and they were delicious! Nobody complained about taste they just ate it up! But for saltwater its fried flounder and freshwater its rainbow trout cooked in butter in a cast iron skillet!

Well, after eating it for the first time in my life a couple weeks ago, I have to say walleye.

Of the saltwater fish that Ive tried, fried Halibut and fried flounder are near the top. Grilled swordfish was my favorite with smoked amber jack a very close second. Got some vacumn packed Red Snapper a friend just gave me a few days ago so thatll be a first for me. Hope my wife loves it so shell encourage me to go catch some.
Freshwater would be Crappie, fried Bowfin and fried bream/sunfish.

This has been a very interesting thread. Thanks to all for the input. I just got back from the Florida Keys and the fresh mangrove and mutton snapper were really good but I will still take red snapper anytime.

Also I find it very interesting that catfish is not mentioned often since they are one of the most fished for freshwater species. And I need to find a good source of walleye.

Seriously, all kidding aside, LMB are really good when fried like crappie and bream. They're every bit as good as blue catfish. I almost always catch one or two when crappie fishing. They're an extra bonus.

Walleye hands down particularly when its cooked during a shore lunch in Northern Saskatchewan and the loons are doing their thing! Crappie would be next.
