Got some winter stockers in the freezer? This is fast, easy, healthy and tasty. Rub light coating of olive oil on trout skin. Put 2 lemon sliced in cavity and 2 more slices on top. Wrap in aluminum foil so as to keep lemon juice inside foil while cooking. Cook on 425 for 20 minutes (a few more minutes for large trout). Open foil, remove lemon slices, srape skin off, dust meat with Cajun seasoning, enjoy. If you season before cooking you will lose much of the spice due to the lemon juice.
