On a 1991 Ranger 375V my top speed with load and two fishermen is 41mph. I feel like I should be around 50mph. My prop shows wear. What prop would give me a decent hole shot and better top end?

Way too small motor for those expectations. A good running 150 will go about 55 on that hull. Any money thrown at it will give small results.
If you love that boat and plan on keeping it, save your money and find a rated Motor to hang in it.

My dad had the same Hull with a 115 Yamaha and it did 50.

I had a 17 Champion with a 115 Merc on it, and it would do 45gps on its best day lightly loaded. I would definitely expect low 40s with your setup loaded. Like was mentioned, a 150 is the motor to hang on that hull. I saw an older carbed Evinrude 150GT on Craigslist the other day, thats what Id be looking at if it was my boat that I was going to keep for the long run and was wanting more performance.
