I'm not cooking, but I heard through the grapevine that a whole smoked goose (tame one I think) was on the menu for Thursday. Most likely have smoked ham too. I got tasked with bringing the deviled eggs. It was always my Mom's dish to bring when she was alive, now it's fallen to me. Hope it isn't a flop. Probably make a peach cobbler too in case the eggs aren't well received.

I don't brine. Try to find 10-12 pound birds. Inject with creole butter. Dust with Cajun Shake. Fry 3 minutes per pound + 5 minutes in peanut oil. After oil cools... filter back into container for seasoned fish fry oil. The oil usually last me all year used about 1/2 gallon at a time for a fish fry or wings. I will be frying four birds Thursday morning.

Only brine the smoked turkeys, personally.

Fried turkey, just make sure it's defrosted. Inject, little rub massage. Release into the Grease!

I don't even know. That's the results of family from MO coming down for Thanksgiving taking over the cooking, and mixing with a bunch of hoity toity women in-laws who say they want it to be spicy. hmmm

I walked in and said, y'all know it's against the law to kill a buzzard, much less cook the dang thing.... I got shunned over that one.

I don't like turkey unless it is smoked and tastes like ham.
Wont be fixing any turkey unless its lunch meat, then I may warm it up in the microwave.

I think the only way to achieve that flavor is by slicing it thin, putting it inside a toaster with small wood chips to help get that delicious smoky flavor you are searching for

Fried in peanut oil like I do most every year. Still haven't tasted a better turkey in twenty years.
