OK, Chuck, level with me. I hate "fishy" taste and had always found leaving the skin on caused that. Is it different with sunnies? We have always filleted and served as nuggets. Dipping them in mustard and then dipping them in the fry mix makes a world of difference in both the taste and texture. Try dipping your fish in mustard followed by the fry mix before frying or baking them. Oh yea. Don't forget the Ice Cold Modelos!
