Thanks Gar1970 and crope1 for the replies.  Nothing beats catching a bunch of nice hungry Bluegill and frying em up the next night.  Yes Sir. It just don't get any better.

Thanks guys for the replies! Recipe is very easy. I used Crisco Vegetable Oil in a preheated pan. Dipped fish in regular yellow mustard and then dipped them into the fry mix. (Louisiana Fish Fry Mix-Extra Crispy.) Fry until golden brown. Yes Sir "It just don't get any better"!

Had me some Bluegill the last weekend. Dipped them in mustard and WOW! From now on will be giving them the "mustard bath" every time! They were simply GREATTTTTTTTTTTTTTTTTTTTTT!

OK, Chuck, level with me. I hate "fishy" taste and had always found leaving the skin on caused that. Is it different with sunnies? We have always filleted and served as nuggets.
