Banker, I have a stock pond that has channel cat and big old bream I feed them and the cats have an off taste but not those bream.

Try spreading mustard on your fish before frying em. I got that tip from "Smithaven". The fish turn out super good. Side Note: Crappie,White Bass,and Bluegill/Redear have always turned out GREAT for me with or without the mustard spread.

One of the best ways to get rid of any "off taste" of any white meat freshwater fish is to soak the fillet in sprite or 7up for a while before cooking. Brightens up the flavor immensely.

I have tried the extra crispy and it's pretty good. I like the spicy the best. "Kjwolvy": I think I will hold off on that one.

Chuck keep living the good life. I had a plate of fired Mcqueeney Bluegill the other night and they were simply outstanding. I did the "Smithaven" mustard treatment on em. Spread mustard on the out side then rolled em in fish fry mix before frying. Simply very hard to beat.

That's the only way to eat them. Feel sorry for those who don't understand the art of it and are afraid of a bone. I love sucking on the bones. It causes you to savor each and every one. After you get done with the bones you suck the tiny crumbs off your fingers. Why is my mouth watering?
