I don't stand and fish and based upon those I fish with, I think you will find a minimal amt of standing and fishing going on across the population. But it seems that 80% of first-timers appear to be making kayak decisions with the question of "can you stand in it?". That easily leads people to select boats that are probably wider (and slower) than they need and mfg's to cater to this perceived (and in some cases legitimate) "need". I tend to always be moving when I am fishing so standing and fishing one spot is not much interest to me....likewise, if I was in a situation with wind and/or current, I imagine more times than not it would be sending me in a direction I didn't want to go or pushing me away from structure I want to fish and then you have to either grab a paddle for adjustment or sit down and pedal/paddle/rudder. I would like to see lengthy video of some of the stand-and-fishers just to see how they manage their boat and fish at the same time - not to be judgmental but just to understand the tricks. I can definitely understand the advantage of standing for sight casting to fish...but seems conditions would have to be just right to be effective.

Rivers probably 80% Lakes probably 50% Standing to fish is important to me, mainly fishing for large mouth. My next boat was going to be a pedal drive, opted for storage and standablity.

I would say I stand 50-75% of the time on lakes and 75% on rivers.

Occasionally when I want to throw a jerkbait and also sometimes during the spawn to get a better look at fish on beds. Wind has to be light because unless you have a power pole you've given up control of your boat when you're standing. I'd say 3-5 percent of the time.

10% of the time since owning my PA. If the winds were calmer during the times I fished that percentage would probably go up. Especially during the spring time. Last year it seemed like anytime I touched my kayak the winds would kick up to 15 to 20 mph.

Depends on what kayak I'm in but in my Commander I stand a lot more. I can paddle that like paddle board while standing and it's easy to pick up and put down my rod or paddle while standing. But that all depends on the situation, bait, or if I'm tired of sitting.
My % would be the same as yours but in the bays last year I stood almost the whole drift in my Commander but since we paddle for miles It's hard to figure the percentage. I would also add ponds and small lakes in your list where I'm closer to 70% standing.

When I'm anchored or clipped to timber, 60% standing.
When I'm drifting, 10%...otherwise I'm too big of a sail...

Maybe 5% of the time...but I really only stand and truly 'fish' at one small lake with clear water. Other times I'm standing just to stretch, etc. I enjoy it, and see myself using it more in the future...it just takes practice to get comfortable I've found.
I'm still on my first kayak(3rd season with it now) and had virtually no experience with a fishing boat beforehand - I was a little overzealous on the concept of standing going in to my first purchase to be honest. In every picture collection on every fishing website there's a guy casually standing on his kayak, reeling in lunkers with ease without so much as a wobble. The reality is a little different - as someone said, you're a sail if you try that with a little wind on open water. Your boat slides backward and forward as if it's on ice, so big hooksets aren't quite as easy as they make it look and if you're not careful when you sit it's going to slide out from under you. Add a beer gut and even getting up/sitting down can be tough if you're not in a high-seat. maybe that's just my boat, but these seem like universal problems for smaller yaks.
