There is still a few left in Ray Hubbard that hang out up in the north end where the river comes in.
They filet very easy, but you're right about the problem of them not fitting into the pan and that is a major issue.
The solution I found for that is to leave the skin and scales on the fillet and grill them like redfish on the half shell. The fit on most grills ok.
I'll say this if you ever land one by lipping them, you'll only do it once.
Judging from the mouthful of razor blade teeth they have I'd have thought they were crossed from a dang gar instead of a pickerel !!

I'd heard rumors of them crossing naturally in Caddo with the pickerel in there but I think someone was pulling my leg about that deal.
