I put mine in aluminum foil, put butter inside and out and add Tony Chatcheries Cajun seasoning. Put on the grill, indirect heat, and cook 15 to 20 min or till meat flakes off. Pull the skin off and enjoy.

same as above, but i use very little tonys and use lemon pepper

i like to cook with sliced onions as well.

Just smoked 5 of the big trout from the Trinity Park stocking. I use pecan burned down to embers but still smoking. Tastes like premium grade lox. I ate 3 of them for lunch with salt and lemon squeezed on them. Yummy.
