Pound for pound, these have to be one of the stoutest fish I have ever fought. I caught 3 on Friday and was completely spent. Watching them blow up on a top water is awesome! That's when the fun begins. 10-15 mins later muscles start to cramp and soreness sets in. What a blast.

I have eaten Jacks back when I was a poor college student and they were good (when prepared correctly) to me then. Of course I rarely had $ for meat back then. I cut the jacks along the backbone lengthwise to get two giant slabs of fish. I put them in a container with salt, pepper, onions, worceshire, and a little barbeques sauce. Soaked overnight in the refrig. Then, smoked the fish on indirect heat until done. Remove the skin, and then all of the red meat you will find just under the skin. I used a spoon and it just skimmed out the consistency of mud. I remember the absolute best use was to then mix the meat up with mayonaise, onion, pickle relish and make a jackfish sandwich. But no, everyone else will tell you they are not edible.
