What is the best way to cook bass? The ones over about 5 pounds I usually blacken.

The smaller ones I fry but it's hard to keep them from getting a little dry. Black bass like other sunfish have very little natural oil in the meat. Any resepe or technique would be greatly aperacited.

I fry them, grill them, blacken them and cook 'em in butter and olive oil and make fish tacos.

I usually fry em after dunking them in some Uncle Bucks SPICY fish batter. IMHO the 12" to 16" fish are the best eaters. mmmmm....bass nuggets!

I don't eat bass, but I hear that if you spread a very thin coat of mustard or louisiana hot sauce on them, it takes the "game" taste out... My Uncle swears by it.

I recently took another look at eating white's or black's as were my first choice. But whites are easy here so I caught a quick dozen and when you fillet you must use the knife to remove the thin layer of red meat. Cleaned this way and fried in Louisiana Fish Fry, they simply can't be beat.

I like em dipped in cornmeal and deep fried. To me fresh caught and cooked LMB is as good as frozen/then thawed and cooked white perch.

Bass really do not taste good until they get over 8lbs. They have to have the bug eyes and big belly before I even bother eating them. Only problem is I only get to eat one once or twice a year tops. smile
